Creamy Avocado Spaghetti
There are days when I feel totally uninspired. On days like that, I don’t really feel like working, cooking or even having a meaningful conversation. It happens without a warning or a probable cause. I just wake up feeling blank.
Chocolate is my choice of nutrients on such days. I especially like it while I’m drowning in the comfort of my couch, wearing warm pajamas and enjoying a glass of nice red wine. That’s my comfort zone, a soothing combination of factors that makes me feel, well, less numb. Works every time. 
This is where it gets complicated. Apparently, not everyone acknowledges chocolate as a proper meal. I don’t really get that, but ok. So, I still have to prepare a “proper” meal for those lucky people that live with me. I am very thankful that they like pasta.
Mark my words. This avocado spaghetti recipe is a keeper. Whether you’re short on time or you just don’t feel like spending hours in the kitchen, this creamy pasta is your saving grace. It’s rich, smooth, creamy and super healthy. You don’t need any cream or butter, just a couple of avocados, some garlic, lemon and fresh basil. Whiz it all up in your food processor, season with salt and pepper and thin out with some pasta cooking water. Done!
This recipe is vegetarian, but can easily become vegan if you omit the grated Parmesan cheese at the very end. If you like guacamole, you will love this creamy pasta dish.
Creamy Avocado Spaghetti

2 ripe avocados, peeled and pitted
juice of 1 lemon
1/2 teaspoon lemon zest
2 garlic cloves, roughly chopped
2 tablespoons olive oil
2 tablespoons chopped fresh basil
1/2 teaspoon sea salt
some freshly ground pepper
3-4 tablespoons pasta cooking water
lemon wedges, to serve
grated Parmesan cheese, to serve
In the bowl of your food processor or blender, combine avocado, lemon juice and zest, garlic, olive oil, basil, salt and pepper. Process untill smooth and creamy. Give it a taste and add more salt or lemon, depending on your taste.
Add pasta cooking water to thin the sauce out a little bit. Process until nice and creamy. The sauce should be the consistency of a thick yogurt. Add some more water, if necessary.
Drain the pasta and spoon the avocado sauce into hot pasta pot. Add the spaghetti and stir well until fully combined. Serve with lemon wedges and freshly grated Parmesan cheese.

prekrasno jelo! Mislim da jedino na ovakav način ću pojesti avokado :) ne volim baš guacamole, jer mi avokado ima taj neizbježni okus kreme za lice :D ali ovo tvoje ću probati!! :)
pa uzmi sheabutter za lice i stavi u avokado malo više bjelog luka i bit če ti super! ;-)

I’ve heard about avocado pasta, but haven’t made it yet. This looks SO good!
Obožavam špagete na sve načine. Ovakvu kombinaciju još nisam probala ali zanimljivo mi izgleda. Fotografije više ni ne moram hvaliti, znaš da su odlične :)

This is a clever idea. Avocado is great for creamy texture and healthy fats. I just never thought to use it in pasta sauce. Can’t wait to try this–thanks!

Monika, ja sam sad ovo napravila za ručak sebi i mužu koji ne voli avokado. Ne samo da je svoje pojeo, nego je i moje pojeo, jedva sam dio uspjela sačuvat. Odličan mi je ovo recept, baš po mojoj mjeri, jednostavan i zdrav.
